Ingridients:

*This recipe makes about 12 muffins. The recipe can also be doubled*

    • Whole Wheat flour - 220 gms
    • Baking Soda - 1 tsp
    • Salt - 1/4 tsp
    • Cinnamon - 1/2 tsp
    • Chopped walnuts, raisins or chocolate chips - 1/2 cup 
    • Eggs - 2
    • Milk - 56 gms
    • Sugar - 1/2 cup (or replace with honey -168 gms)
    • Coconut Oil / melted unsalted butter - 75 gms 
    • Vanilla essence - 1 tsp
    • Bananas - 225 gms (very ripe, mashed)

Method :

1. Preheat the oven to 180C and line the muffin tray with liners.

2. Sieve flour,baking soda, salt and cinnamon powder and set it aside.

3. In a mixing bowl, beat the eggs till light and fluffy and gradually add sugar or honey, vanilla essence and oil one by one. Beat this mixture well till everything is well combined.

4. Now gradually fold in the flour mixture along with the chopped walnuts and mashed banana till it's all combined and comes together.

5. Scoop the batter into the muffin cups evenly and bake at 180C for 15-20 minutes or till done.

6. Once done remove them from the muffin tray and let them cool.
