Easy Bruschetta Recipe | Classic Italian Appetizer with Fresh Tomatoes & Basil





Bruschetta is an Italian dish made by toasting slices of Italian hard crusty loaf. Its simple, easy and quick to make. There are many variations of making this dish, you can add different flavours to this by changing the toppings - chopped herbs like basil, marinated finely chopped vegetables or different types of cheeses. It's your choice to mix and match the toppings you like.


This dish is a starter and it means toasting, so we shall be toasting the bread and garlic pods. Also Italian dishes use a lot of olive oil, so be generous in drizzling the olive oil for toasting as that will enhance the flavour.If you like the garlicky flavour, you can also use garlic butter while toasting the bread. This will make the bread taste like garlic bread itself.

This recipe also uses a lot of tomatoes and is topped with cheese , so it actually looks like a bite size pizza. Having said so I think it can be served as a snack for kids in the evenings or in birthday parties. Hope you enjoy making it as much as you love eating it.
   

Ingredients :


Hard Crust Loaf (Italian loaf) - 1

Tomatoes - 2-3 medium sized ( finely chopped)

Butter - 2 tbsps

Garlic - 10 pods (finely chopped)

Pepper powder - 1 tsp

Oregano powder - 1tsp 

Mozzarella cheese (grated) - 1/2 cup

Olive Oil - 1/2 cup

Salt to taste

Basil leaves


The ingredients can be increased or decreased as per your taste requirements.


Method:


1. First slice the bread breadth wise diagonally,the slices should be of 1 cm thickness.

2. In a pan fry the garlic pods with skin, in olive oil till they are slightly burnt. Let them cool a little and then peel off the skin and chop the garlic finely.

3. Now place the bread slices on a non stick pan , drizzle olive oil and let them toast. Flip the sides so that they get evenly toasted. Flip and drizzle olive oil. You can also use garlic butter or
ordinary butter to toast the bread. The garlic butter will make the bread taste like garlic bread.

4. While the bread gets toasted, mix finely chopped tomatoes (It is best to use ripe tomatoes),salt, finely chopped garlic, pepper powder,oregano flakes, olive oil and basil leaves hand torn in a bowl.

5. Now take the bread out of the pan and top it with the tomato mixture and with grated mozzarella cheese. Drizzle more olive oil. This can be served this way, else you can place the topped bread
slices in a pre heated oven till the cheese melts.

6. Preheat the oven to 200*C and let the bread bake for 5 mins till the cheese melts.
I love it when the cheese is all melted.

Alternate Tips:


For the toppings you can use chopped black and green olives along with the chopped tomatoes.

The topping can also be mixed with vinegar.

It is best to use fresh ingredients for this dish and you can use cheeses of your choice.
