A Brookie !! sounds strange isn't it. Well you read it right, a brookie is a mix of cookie and brownie. This is a heaven for chocolate lovers as it is fully loaded with chocolate. It has a hard crust on the outside and is soft and fudgy inside.
My niece is a chocolate lover,in fact I can call her a chocolate addict. So I wanted to bake something special for her which is rich in chocolate and this recipe popped into my mind. These are best to be had with a glass of cold milk.
So without any more chitchatting, lets just get to the recipe.
All purpose flour - 1 3/4 cups
Cocoa powder - 1/2 cup
Baking Soda - 1/2 tsp
Salt - 1/2 tsp
Chocolate chips - 1 cup
Butter - 8 tbsp, unsalted
Eggs - 3
Vanilla Essence - 1tsp
1. Sieve all purpose flour, cocoa powder,baking soda and salt and set it aside.
2. In a microwave safe bowl add the chocolate chips with butter in it. Microwave for 30-45 seconds and mix well till the chocolate is well combined with the butter.
3. Preheat the oven to 180*C.
4. In a big bowl add the eggs,sugar,vanilla,chocolate mixture and mix well till combined.
5. Now slowly add the flour mixture and mix well till its all combined.
6. Scoop batter using a big spoon and place it 2 inches apart on a baking tray.
7. Bake until the brookies are flat and surfaces begin to crack about 15-20 minutes. Once done transfer them from the baking tray to a wire rack to cool.
These brookies will double in size so leave enough space in between. They can be stored in an air tight container for up to 1 week.
