Best Sponge Cake Recipe | Light, Fluffy & Easy to Make at Home


The aroma that fills our house when a cake is baked is eternal and the pleasure of eating and relishing a perfectly baked cake is even more eternal and a proud moment for any baker.
Not everybody can nail  this talent of baking at first, we have a few failures initially but with following a correct recipe, measurements and certain techniques, am sure we all can be a home baker for our family.

People think baking is a complicated process but trust me with practice and patience we all can easily master this basic sponge cake recipe

Today am starting with a basic sponge cake recipe. A homemade sponge cake has a firm yet well aerated structure.There are different methods of making a moist sponge cake. But the recipe below gives a very 
light and fluffy sponge cake.



So, lets learn how to make the best sponge cake at home with this easy recipe. Light, fluffy, and moist, this classic sponge cake is perfect for beginners and a must-try for every baking lover!

Ingredients:


Eggs - 4

Flour - 180 gms

Sugar - 120 gms ( powdered)

Baking powder - 1 1/2 tsp

Vanilla extract - 2 tsp

Oil - 165 ml


*Please note that all the ingredients should be at room temperature*

Method :

1. Separate the egg whites and yolk.
{ This can be best done when the eggs are cold.So separate the eggs as soon as you take them out of the fridge and then let them come to room temperature}

2. Sieve the flour and baking powder together a couple of times as this adds air to the flour.

3.Grease a 8" tin with butter and dust it with flour. Tap the extra flour out. Also preheat the oven to 180*C.

4.In a clean,dry bowl take egg whites and with clean dry beaters beat the egg whites till they are light and fluffy.
{Make sure the bowl is completely dry and has no traces of oil as it might affect the beating of egg whites}

5. Add sugar gradually and continue beating till the sugar is well incorporated and you get a thick mixture.

6. Next add egg yolks one by one along with the vanilla essence and beat well to get a thick mixture again.

7. Now slowly add oil/melted butter gradually and continue beating till it's all well mixed and you can see air bubbles in the mixture.

8. After this take out the beater and add the flour gradually via a sieve in 3 parts. Combine the flour in the wet mixture using a wooden spatula using Cut and Fold method.
{ Do not over mix, be very light while combining the flour into the mixture as this will affect the texture of the cake.}

9. When the entire flour is combined well without any lumps, pour the batter in the greased pan and bake in the preheated oven at 180*C for 30-40 minutes or till a toothpick inserted comes out clean.
{ Do not open the oven in between to check the cake.If you do so the cake will sink in the center.Check the cake only after 20 minutes}

10. Once done take the cake tin out of the oven and let it cool for 10-15 mins.After 15 mins invert the tin on a wire rack and gently tap the bottom of the tin.
{ BE very careful while doing this as the hot tin can slip from hand and the cake can land on the floor. LOL}

11. After the cake is out of the tin , let it cool on the wire rack.
{ If the cake does not leave the cake tin easily let it cool a little and then try}

Alternate Tips:


1.To make cake flour for every 1 cup of All-purpose flour replace 2 tbsp of the flour with corn flour and sieve well 4-5 times. This makes the flour light and airy.

2. For a healthy version of cake you can add half All purpose flour and half wheat flour. Its called half and half.

3.. You can make the cake extra special by adding chocolate chips/ roasted almonds/ walnuts /tutti frutti to the cake batter. Before adding just coat them with flour and then mix them in the cake
batter at the final step.{STEP8}
